- Mini Pecan Pies
- Delightful Bite-Sized Pecan Tarts
Ingredients:
- 1 ½ cups pecans, roughly chopped
- 1 cup brown sugar
- 1 cup light corn syrup
- 1 stick unsalted butter, melted
- 3 large eggs
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour
- ¼ cup powdered sugar
- ¼ tsp salt
- 1 cup cold butter, cubed
- 2 tbsp ice water
Directions:
- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine flour, powdered sugar, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until dough forms.
- Press dough into mini muffin tins to form crusts.
- In another bowl, whisk together brown sugar, corn syrup, melted butter, eggs, and vanilla extract until smooth. Stir in chopped pecans.
- Spoon pecan mixture into each crust, filling just below the top.
- Bake for 25-30 minutes or until filling is set and crust is golden brown. Cool completely before serving.
