Ingredients:

  • 1 ½ cups pecans, roughly chopped
  • 1 cup brown sugar
  • 1 cup light corn syrup
  • 1 stick unsalted butter, melted
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • ¼ cup powdered sugar
  • ¼ tsp salt
  • 1 cup cold butter, cubed
  • 2 tbsp ice water

Directions:

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, powdered sugar, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until dough forms.
  3. Press dough into mini muffin tins to form crusts.
  4. In another bowl, whisk together brown sugar, corn syrup, melted butter, eggs, and vanilla extract until smooth. Stir in chopped pecans.
  5. Spoon pecan mixture into each crust, filling just below the top.
  6. Bake for 25-30 minutes or until filling is set and crust is golden brown. Cool completely before serving.
